As for the thermostats I think they are all junk these days

I will most likely use a restrictor plate

I have had good luck with the Robert Shaw High Flow thermostats. I bought two that were modified by EP Stewart and 3rd one without the holes drilled. One failed open but I have been generous with RTV just getting Thermostat housings to seal on my Olds V8's, along with double gaskets. I have ran with no Thermostat with the old Flowkooler water pump on my 403. Only had heating issues towing but that was also with a Thermostat, Champion 3 core was not big enough.
