Make the car hard to start. Hide a momentary-on push button under the dash. Take the trigger wire off the starter and run a pair of wires up to the button. It becomes a two-handed operation to start the car - one turns the key while the other holds the button down to close the circuit. This way, you aren't chopping up the harness, although you may need to be creative where you route the joined starter wire.
 
I would make arraignments that as soon as I get it I would have it appraised by a professional accredited appraiser and get a copy of the appraisal o my insurance company just in case something happens like an accident or a theft.
