I couldn't find a good answer searching this but will 295s fit in the back of an 84 Hurst olds with out rolling the fenders? I found a guy selling some wheels I want and he has a set of 295s to go with them. They were on an 80s Malibu so I think the backspacing will be right but I don't know how big of a tire I can fit in the back.

If wheels have 295 on them, they need to be at least 10" wide (unless it is still 1989). If they are 8", stick with 255's. If they are 9" or 10" 275's will probably work better than 295's.

Unless the back end in jacked up, even 275's can need some fender lip work to avoid tire hits from bumps during a turn.

I would say because the Cutlass has a more squared off wheel well shape they have even a harder time fitting tires that easily fit on other Gbodies and even more so if it is lowered.
You did not specify what series 295 it is but I would say without a frame notch and proper width and backspacing to make use of it you will have rubbing issues.
I would say a 275/60R15 is probably the biggest tire you can get in there with the right rim.

Here is a picture of my Monte with a 2" drop and I have 295/55 M/T drag radials on the back with a 9.5" rim and 5.5" of backspace but they only fit because I notched the frame, I could go a little wider but I like them a little "tucked in".

I had 295 on a 15x10 rim. No frame notch no rubing. But had about 2 inches of lift. From B body springs.
I don't recall the backspace of the rims but can check if you need too.
