Re: my running project

Off the top of my head:

-Fuel line goes to passenger side
-Battery goes to drivers side
-Minor wiring mods for start, run, interior power, temp and oil
-Eliminate computer wiring, or mod to keep AC and cruise control
-Modify stock or purchase aftermarket trans crossmember for dual exhaust, for single, just keep 350 manifolds and piping
-Don't know about radiator, I think you'd want a V8 G-body radiator at a minimum
-Address fan shroud, either V8 or modify
-A TH350 is probably your best trans choice, will bolt right up and fit the stock crossmember (IF it's a TH200)

That's all I can think of off the top of my head, maybe a few other minor things.

Re: my running project

Depends on your definition of difficult. As engine swaps go, this is just about the easiest thing in the world. But an engine swap consists of a number of other sub-projects, and each one needs to be done right. This board and others like it are great resources, along with a good service manual. But LOTS of little things will pop up along the way, and your experience and mechanical inclination will determine now easy or difficult it might be for you. I'd recommend looking deeper into other people's engine swap threads. You will see what sort of things they came up against, and you can decide if these are things that you are ready to tackle for yourself.

Re: my running project

The driveshaft should interchange, and yes it would handle the power. For a mild 350 with street tires, the rear end should handle it, but it likely has 2.41 gears, so it won't perform as well as it could, but will return decent highway mileage if this is a concern. You can leave it alone, or for better performance you could swap gears or go with an 8.5 or a 9" if you also want added strength.
