307 runs when it wants, is it running too rich?

Yes, the jetting is in the carb. It could be too lean. Maybe as simple as turning out the mixture screws. Start at 2.5-3 turns out. Bigger number jet or smaller primary rods will richen the mixture. Once the choke comes off, it could be so lean to kill the motor. Make sure the base timing is around 20 at idle. I have seen as low as 13 at 1100 on the sticker, didn't run the greatest.

I don't have enough info to diagnose but ill throw a dart for ya. Is the engine up to operating temp before the six block journey? Does it start back up right after stalling? In the past, I've had a bad HEI module cause the car to stall after warmed up. Also, how is the fuel pressure. Fuel filter new? Did you rebuild the Qjet yourself? If so, to what specs?
Your right, yes is does start right up, no it was not because the choke has not been wired yet. The module was check as well thats good, checked fuel pressure it was at 10psi, there are 2 filter an external and internal carb filter both new. I had the carb rebuilt by a shop, all out rebuild top to bottom, the fuel was replace and cap, rotor new coil too.

It is set to 20

You need to tune your carb if you haven't already done so and 10 psi fuel presure is too high.

Yah, glossed over the 10 psi, way too much. Probably pushing pass the needle seat. Put a regulator on it.

I was told it needed to be at 2-5psi

You may get various opinions on where it 'should' be, but 10 is too high for sure. Usually' you don't over 7 or so. 2 seems a tad low to me, but anything in the 4-6 range should work well in most applications IMO.
