I'm lazy, I use an infared tempature gun and if the temperature is lower at the exit of the cat than the entrance it's plugged
Sounds like a smarter, easier way to do it.
 
Yeah, the converters in those years were restrictive and plugged often. I would either put a piece of pipe in there, gut it or replace it with a modern converter, if you have emissions concerns. A thick carb gasket should be all that is necessary. Is there any check engine lights? Nice Hurst by the way.
