Where can I find gas door parts for a 78 El Camino or Caballero? Mainly the parts that hold the door open and closed.

The ECC one is probably more likely the method I would try. The one posted was just for representation. 👍

check the junk yards- 80's F body and B body have the stay down plate holders and bolt right in.

FWIW, El camino doesn't have a filler neck behind the license plate, it's a more traditional side opening. Tailgate would get in the way

Only coupes/sedans had the filler neck behind the license plate in back, at least from the factory
