I wouldnt change any sending units if they worked before in the other motor and dont work now it has to be something else....as long as your are using the ones out of your v6 ......Ill bet its the ground cable from the firewall to the bellhousing bolt never got hooked back up.....everytime a motor is swapped this seems to happen....its easy to miss or half the time you rip it in half pulling the old motor out not realizing its there......I had the same problem.....I noticed it in my wipers working erratically.....also The first link I sent you is how to remove the gauge cluster....here it is again http://tech.oldsgmail.com/eint_cluster.php

I would also follow the instructions on that other link I sent originally and solder the connection solid on the tach pin when mine was switched over it didnt make great contact and the tach was jumpy....had to pull it all apart again to fix it....just play it safe and do it the first time
 
After I did my dash swap I had some similiar problems. My temp gauge moves slow and then it will bounce up real high, the oil pressure will be normal and then peg full and then bounce around, cheap sending units maybe? My volt is ok, usually sits on 14 and then settles down as I drive. The tach will read high for a while then it will settle down and be normal. As far as the fuel I dont know how accurate it is. I usually fill up at 1/4 tank and since I have only put 3 tanks thru it in a yr its hard to tell. I would look for the grounds and make sure they are good. Mine are good but I did buy 2 dashes used and they both read different. I had issues with the connections in the dash plug.
 
You said you recently put a motor in your car, did you forget to hook up the ground wire from the firewall to the back of the cylinder head on the passenger side? If it seems like a ground issue, that's usually one of the last things I remember to hook up when I drop in a motor.
