LT1 Running Hot

One last thought on the water pump coupling, mine is (1994) there is a small O-ring on the shaft sticking out of timing chain cover, that holds the coupling on, I replaced this O-ring along with the seals also, in the directions that came with the gasket (seal kit) it stated to install the coupling onto the shaft coming from the engine and make sure it's seated on the splines then install the water pump, it may be possible to install on the water pump and it not be seated on the splines of the drive shaft. Also there is a groove on the OD of coupling, the groove side goes towards the block. See picture

Believe you said you are using a G-body radiator? On the LT1 the lower hose goes to the thermostat housing, do you by chance have the lower and upper hoses crossed, not sure if it would cause overheating, but may be able to lock in some air, there is also an air bleeder on the thermostat housing to help bleed the air.

Yes, I have the lower hose going to the thermostat housing and I used the air bleeder the housing to bleed it.
 
240* isn't that hot for an LT1, they like heat.
Are the fans coming on when they're supposed to?
Were any of the temp settings messed with in the ecu?
Are you using the LT1 coolant tank?
If you're using a G-body radiator, what about the radiator cap?
LT1's run a closed system, so if that cap is venting under pressure, then you're going to end up chasing your tail.

They are coming on around 180-200 and I have no clue about the ecu, it was programmed where I got the wiring from.

fans don't come on plus or minus 20 degrees....if they are coming on at 180 they would be shutting off 170 which is too cool even for a SBC and if you are using a 180 thermostat the fan would be constantly on
 
I have a 180 thermostat and they were running most of the time. I was estimating when they came on, because I don't remember when they really came on. A couple times I started it up they were on the whole time. So since I have a 180 that would make them stay on the whole time? Also I was testing the fans a couple times before it hit 200 (had them unplugged testing).
