It's not very thick at all, maybe 40-60 thou? It's definitely less than a 16th inch. I checked it this morning, and it stuck pretty well. I ran the roller over it again before I left for work. The glue bled through a little; hopefully, it dries clear enough. I put it together wet, so I could move it around a little. All that's left now is to paint the fillers black, trim it up, and clear.
EDIT: Oh, and mount the AC vents, too.

The neighbor came wandering over today, and says "hey, you might want to put some air in your tire." What? Damn, flatter than crap. I pulled the wheel, and gave it an inspection- couldn't find anything. Fill up a tub, and as soon as I put the tire in, there's bubbles. Borrowed the neighbors plug kit, and screwed that up- off to the tire shop. $40 later it's fixed.
The dash project is going ok, I guess. It's nowhere near as easy as it sounded in my head, but I can live with it. It'll look good enough for me- better than the hacked up factory piece that was in there.
