I used Dupli-color's vinyl interior dye. I also used their prep wipes however, they're expensive so I ended up just using a prepaint prep spray and cleaning everything really well. Then I wipe everything down with a damp towel and let it dry.
You have to make sure this stuff is really, really clean so that it will stick. For smaller pieces I usually wash them in warm water with dish soap to get them clean.

I've used SEM brand as well and have never had any problems with the dye rubbing off.
 
When you start painting, make sure you stay patient and take your time. There is a video on youtube from www.gbodywarehouse.com on how to dye an armrest, and at first I laughed because they did super light coats. But it's so much easier and a nicer finish results when you do it that way. Use very light coats and get the bottom of the piece before doing the top so you don't have to lay it on it's visible side when getting the corners.
 
this is the custom interior that I hand stitched in my 79 malibu classic. There rear seat back was modified with facotry head rests taken from a front seat. the rear seat also has a fold out center armrest that I also custom fitted. the front bench frame is out of an 84 Regal since I do not like the malibu factory armrests.

G-bodies with black interiors are better than p*rn if you ask me. 8)

My 84 Grand Prix is getting the ALL BLACK look too (although, it's not done yet because I was waiting on the quieter, low-profile Autoloc dual actuators to replace the bigger bulkier 60lb solenoids in my door popper kit, before the door panels go on):
