I can buy a set of 15x8 rallies with 4.25 backspacing. Would that work fine?
Usually between 4" and 4.50" of backspace you are safe but it varies on tire size, ride height and the actual Gbody they are on, but Monte's have good sized round wheel wells.

How about these.? On this site the price is cheap. Other sites sell these wheels for 100.00 or more per set.

I was able to find some 15x7 rally’s with 3 3/4 inch of backspacing. Any recommendations on tire size for a nice daily driver?

If it were me and I was limited with a 7" rim and wanted the same size tire all the way around then I would get 235/60's it's tall enough to fill the wheel wells and wide enough to give it a more aggressive look.

A 15 x 7 with 4.25" of backspace will look slightly "tucked in" compared to the same rim in a 15 x 8 with 4.25" of backspace but they will work.
Typically you want around 3.75" backspace with a 7" wheel so it is centered.
You could go 15 x 8 all around, not sure if that is an option for you but if you later want wider tires especially in the rear, the rims can handle it.
Here is an old picture of my Monte with 15 x 8 ARE wheels and 245/60 and 275/60 tires.
