84' Cutlass pro touring build

Taking a short break from blocking so I decided to clean up my hood. I'm concerned with the surface rust as seen here. I can convert what is seen but what about what's under the supports??? Plus I don't know if I'm going to be happy with the center line on stock hood. Confusion reigns Supreme.
Cowl hood? Ugggg.

My form follows function mindset tells me I need as cool engine compartment temps as possible with 11.3 to 1 compression and down force at speed. Not that I'll be breaking any rules of the road 😆
Trak Spec makes 7.5 x 18 louvers that are universal in design. I have to confirm with them about slight crown in hood and fitment. Might not be everyone's style.

Well I was cruising along until I got a case of shingles. Pita if anyone has had the pleasure. Anyhow I finished 400 and 600 wet sanding. Had many many burn throughs on too many edges 😳 Arggg. Should have wiped everything down in those areas better because I found surface rust and my feeble mind decided to use rust converter on them. Sanding that back down and had bare metal in many spots again. Spot primed with epoxy then wet sanded again. Bare metal again. 3 days work and back to where I was. Just cleaned with wax and grease remover and hopefully they won't rust. Just had to rant a bit. Major clean up then hopefully sealer and paint. Maybe this week.
 
Did some triangulation thanks to Mikes Montes. I didn't have rear speakers. Stock all this car had was the tiny ones in the dash. Didn't want to mount speakers under because of that strange bar across the top. Just didn't seem right. Slight cutting, cleaning and brushed some epoxy on circumference. Dropped right in with some neoprene for insulation

Spent last few days cleaning and more to come. Getting very close to the main event. Whew...
So I need some advice. How would you tackle this? One coat of sealer then 2 to 3 coats of paint. Questions i have are really about the jams. I am not taking doors off. My plan was to start at front jam near engine compartment then open door and do inside. Would you seal it alone then paint alone then afterwards do the rest of the body shell? Or just do it all together?
And any hints on what I should keep nearby like tweezers etc.
I'm worried about over spray mostly. Thanks guys.
