+1 on replacing both the tires. Even though they may look okay, 6 years of UV exposure time on the rubber, which still happens even if it is stored in a unit or garage or even if under a tarp, can and will happen. As for the apes, personally I'd ride with them for a few miles, both in town and on the road and see how they feel. The stock bars may not offer as much leverage on the front end at low speed as they do. Also, they are not a universal bar, they are likely to be dimpled for the wiring harnesses for the switches and buttons and the harnesses themselves might have had to be extended or replaced to get the correct length in them to allow for proper slack for turning. Same-same the clutch cable and brake hose. Consider flushing the brake lines and reservoirs both front and rear when you replace the brake fluid because the old stuff soaks up water just sitting there. Otherwise have fun.
