Run it see how it does. Old gas can cause alot of problems, but if you've been starting it, it might be alright. Keep an eye on your fuel filter(s). Go from there. I think it'll be alright.
 
If you really have a universal bellhousing transmission, then yes you can bolt a chevy motor to it.
 
You would need moter mounts. Check some of the other threads on this subject to find out all the rest of the details.
 
It's actually a pretty straight forward swap. Easy actually. You'll need the right motor mounts/transmission to work with a small block chevy, chevy headers or exhaust manifolds (whatever you choose) and the rest should be pretty simple. I dunno however what side the fuel lines run on Pontiac's, I know Buick V6's had them on the opposite side of chevys, not a big deal though. There should be some swap threads pertaining to your questions, if you can't find what your looking for feel free to ask.
