there is only one answer Jimi Hendrix. there are STILL songs that they haven't figured out how he played them. he did things that no one was able to mimic until they had pedals and electronics, if at all.
other guitar greats (in no particular order) joe satriani, his student kirk hammet, mustaine, rhoads, angus young, joe perry, BB king, DIMEBAG (RIP, enjoy the weed and jaeger in the next life man 😢 ), wes boreland, kerry ****in' king, willie adler, mark morton, chris de garmo, pepper keenan, michael amott, Iommi, wylde, jerry cantrell, slash, santana, stevie ray...
 
For me it would be Lindsey Buckingham of Fleetwood Mac And Let's not forget Prince what about Mike Cambell of Tom Petty and the Heartbreakers?

there's also CC deville alot of the hair bands had really good guitarists. lousy music but good guitar work.
 
Eddie Van Halen, Steve Stevens (Billy Idol's Ax Man), and all the afore mentioned.

My favorite guitar solo has to be David Gilmour's work on "Shine On You Crazy Diamond (parts 1-5)."
