do you have cruise control on the car?, if you do you might also want to disconnect that while your disconnecting the brake light harness

How does it idle when hot in park?
Put emergency brake on or block wheels and put in gear. Does it stall?
If you apply the brake and put in reverse does it stall?
I just don't have enough info to give a meaningful answer yet so we have to pick your brain. "Could be" entails a bunch of things.
I am trying to discern if engine movement is making it stall or if brake pedal movement may be rubbing a wire. Engine performance is the issue. It is also possible that the torque converter clutch is applied even though the ECM has been disconnected.

Yes I can engage parking brake and put car in drive... it immediately stalls once I apply brake

Those were the right ones (orange/white/light blue-brake lights, purple/pink-TTC)

If you remove the vacuum line to your brake booster and plug the port on the engine or carburetor, which ever one you are using, does the engine still stall when you hit the brakes.

I would make sure that when you push on the brake pedal the arm is not pushing on any wires that are hanging down and possibly grounding them out or possibly touching a bare wire as it travels down.
