I'm not responsible for cooking the bird yet, but my dad has been cooking them on a Weber charcoal grill for years!!!!! He gets it warmed up in the oven, then puts it on the grill with hickory wood, apple wood, etc for around 2 hours.
It turns out absolutely amazing!!! I'll try to get a pic tomorrow.
Scott I need more information on that cooking style. I've made 2 in the smoker but a 22 lb bird takes like 26-27 hours it comes out phenomenal but I never have the time anymore. Maybe I could recreate The flavor and the outcome using your father's method? How long dose he bake it and at what temp before grilling it off? Is it straight out of the oven to the grill or dose he let it rest sorry if I'm grilling you but you have my attention lol

Eric, he first stuffs it with chopped apples, cinnamon sticks, etc. Then he bakes it @ 350° for 2 hours to get the heat up. While baking he works on making sure the grill is loaded, and I mean loaded with enough charcoal, hickory, and applewood to last 2 to 3 hours. He goes straight from oven to grill.
