Car gets hot with ac lever on cold?

Update: it still does this. It always has. It probably did with the v6, but I had no temp gauge then. It only does it when I flip the blend door level from hot to cold. Even if I put the top lever on Max AC it will still climb to 230. Put the blend door back to hot and the temp comes back down. Position of the temp sender has nothing do do with it, because why would it ONLY react to blend door position? I have a new radiator cap on it now, every single part of the cooling system is new. There aren't any air bubbles in the system, as it would show up during normal operation of the car.
The only mildly logical explanation would be the radiator is too small... but even that doesn't make much sense. Why does my heater core have more to do with the cooling system readout than the radiator?
 
Hose closest to the drivers side is plumbed into the intake and has the heater valve.
Passenger hose is on the nipple at the water pump. Passenger hose has the preformed end for the water pump. Drivers hose with the valve was like that when I got the car. Valve is hooked up.
 
Looking at this the smaller hose should be going into the intake

Bypass the heater core completely with a hose from the pump to the intake and report back.

Did that inbetween my most recent heater core replacement. Reminder, this isnt a new issue, its been going on since my first engine in the car. I guess i can put a manual shutoff where the valve is to test if its bad. Or use my hand vacuum pump

When you did this, did you turn on the ac?
