2jz is an awsome platform. I had buddies with Supras back in the day. I wont hate on your project as long as its for the right reasons. You want to be different. If you go old school v8 gas is horrible and all the things you seem to believe about V8s are true, The Ls platforms can make make some serious power while getting amazing power to gas mileage ratio. Great torque, sound, and way more power potential than the 2jz if you pick the right one. Problem is everybody is doing it.
Now about the 2jz, in order to make that 750 horse range it will be a rough engine as a street car. You will need pretty decent turbo that wont spool till 35-4k range so it will make its power basically at high speeds not down low. Even all the drifters and such that used to put 2jz's in there 240's and 350z's have switched to using Ls motors.
As long as you have all the facts correct and still decide on the 2jz then go for it and I hope it all turns out great but it would suck to spend all that time and money to not get what you were expecting and wished you had gone a different route.
