Well took it for a drive again this morning and still same thing is happening. What i still find very odd is how its reaching that low idle really fast?

Well i notcied before when i put the AC on Bi Level that also made the car idle high. When its on Vent on economy it idles low

your carb has a solenoid that increases the idle speed when you turn on your ac to compensate for the drag of the compressor. If you turn on the defrost that turns the ac on.

Like I said the defroster turned on your high idle.
But that is not the reason it was bogging.
Somewhere something got stuck, there is a break in a wire or a bad ground.
I would still get under the hood while the car is running and wiggle the wires around. If no changes then hopefully it was a one time thing and something got stuck open or closed.
But if you wiggle the wires around and the problem comes back, then yes you have an electric problem somewhere in the harness.
You may have pinched a wire installing the new carb.
