A Buick 350 is the easiest swap. Only thing that would be easier would be another v6.

However, nothing beats the standard old SBC in terms of parts availability and cheapness. basic 330hp(?) 9:1 roller crate motor, 200r4 (unibell pattern, fits any bop/chevy/caddy engine) and some 3.xx gears it will be a great driver.
